Recipe: No. 7 Broccoli Sandwiches
Notes: The canned lychees will be in sweet syrup. Don't do like I did and search every store and online for unsweetened lychees. The sweetness works well with the vinegar.
Roasting pine nuts is a tricky business. I put them in skillet over medium heat and shake the pan the whole time. Pine nuts will sit there and sit there for minutes on end then when you look away for a second, they burn.
Another way to roast pine nuts is to put them on a pizza pan in a 300 degree oven and check them very frequently, shake the pan too. As soon as they start to brown, pull them out. Don't wait like I did and have to throw them in the garbage.
I like feta cheese better than the ricotta salada called for in the recipe.
Homemade fried shallots are much tastier and crunchier than the store-bought but they are also oilier. Take your choice.
